Several years back we grafted an alleged Chave selection along with Grenache and Mourvedre within a 1 acre block on the Valenti Ranch. While this blend doesn’t play along with the rules of traditional GSM blends; this one is leaning more in the Syrah direction and the Grenache and Mourvedre play more a seasoning role. This field planting is picked all at once and vinified together along with a touch of Viognier for some aromatic lift. Some Syrah is added from the Perli Vineyard as well. The fermentation was 100% native yeast using 50 % whole clusters. The end result is a cool climate blend showing black and red fruits, crushed pepper, cured meat, orange peel , sage, pennyroyal and a touch of floral violet. A lean cool climate blend with just the right amount of lusciousness. A food wine.
